Sea Food Recipes : Grilled Salmon Sandwich with Dill Sauce


Ingredients :

 4 slices bacon
 1 (1 pound) fillet salmon, cut into 2 portions
 1 tablespoon olive oil
 1/3 cup mayonnaise
 1 teaspoon dried dill weed
 1 teaspoon freshly grated lemon zest
 4 slices country-style bread, toasted
 4 slices tomato
 2 green leaf lettuce leaves


Cooking Method :

1. Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.

2. Preheat an outdoor grill for medium-high heat and lightly oil the grate. Evenly coat the salmon with the olive oil.

3. Cook the salmon on the preheated grill with the skin side down for about 5 minutes before flipping and cooking on the other side until the skin can easily be lifted off the flesh, about 5 minutes more. Flip the salmon once more and continue cooking until the salmon flakes easily with a fork, another 2 to 3 minutes.

4. Whisk the mayonnaise, dill, and lemon zest together in a small bowl; divide between 2 of the toasted bread slices. Top each with 1 portion of cooked salmon, 2 tomato slices, 2 bacon slices, 1 lettuce leaf, and a remaining slice of toasted bread.

Sea Food Recipes : Pepper-Honey Cedar Plank Salmon


Ingredients :
 2 (12 inch) untreated cedar planks
 1/4 cup pineapple juice
 1/3 cup soy sauce
 2 tablespoons white vinegar
 2 tablespoons lemon juice
 1 tablespoon olive oil
 3/4 cup honey
 1/4 cup packed brown sugar
 1 teaspoon ground black pepper
 1/2 teaspoon cayenne pepper
 1/2 teaspoon paprika
 1/4 teaspoon garlic powder

 6 (6 ounce) skinless, boneless salmon fillets
 1 pinch salt and pepper to taste

Cooking Method :
1. Soak the cedar planks in warm water for 1 to 2 hours. Add a splash of bourbon to the water if desired.

2. Bring the pineapple juice, soy sauce, vinegar, lemon juice, olive oil, and honey to a simmer in a saucepan over medium-high heat. Reduce the heat to medium-low, and stir in the sugar, 1 teaspoon black pepper, cayenne pepper, paprika, and garlic powder. Simmer, stirring occasionally, until the sauce has reduced to a syrupy consistency, about 15 minutes. Set the sauce aside.

3. Preheat an outdoor grill for medium heat. Place the planks on the grate. They are ready to cook on when they start to smoke and crackle just a little.

4. Season the salmon with a light sprinkling of salt and pepper. Place the fillets onto the smoking cedar planks, close the lid of the grill, and cook for 10 minutes. Spoon a small amount of the sauce over the salmon fillets, and continue cooking until the fish turns opaque in the center, about 5 minutes more. Serve with the remaining sauce.

Sea Food Recipes : Shrimp and Gravy


Ingredients :
 3/4 cup chopped raw bacon
 1 small onion, chopped
 2 tablespoons all-purpose flour
 1/2 cup water
 1/2 cup evaporated milk
 1 pound medium shrimp - peeled and deveined
 1 cube beef bouillon
 1 tablespoon garlic salt
 1 tablespoon chopped fresh chives
 salt and pepper to taste


Cooking Method : 
1. Place the bacon in a large skillet over medium-high heat. Cook and stir until crisp. Remove bacon and set aside, leaving the grease in the skillet. Reduce the heat to medium and add the onions to the pan. Cook and stir until transparent.

2. In a small bowl or cup, stir together the flour and water. Mix in the evaporated milk. Pour into the pan with the onions; cook, stirring constantly, until gravy has thickened. Stir in the bouillon cube, garlic salt, chives, salt and pepper. Return the bacon to the skillet, and add the shrimp. Cook for 5 to 10 minutes, until shrimp are pink and opaque. Serve over grits, biscuits or rice.

Ingredients :

 1 (16 ounce) package linguine pasta
 1 tablespoon olive oil
 4 cloves garlic, minced
 1 small red onion, minced
 1 tablespoon olive oil
 2 tomatoes, seeded and diced
 3 green onions, chopped
 1 (8 ounce) can crushed tomatoes
 1 tablespoon tomato paste
 1 teaspoon dried oregano
 1 teaspoon ground thyme
 2 pounds mussels, cleaned and debearded
 1 pound uncooked medium shrimp, peeled and deveined
 1 cup dry white wine
 2 teaspoons lemon juice
 1 lemon - cut into wedges, for garnish


Cooking Method : 

1. Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the linguine, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink.

2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Stir in the garlic and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Heat another tablespoon of olive oil in a large skillet over medium-low heat. Stir in diced tomatoes and green onion; cook and stir until the tomatoes have softened. Stir onion mixture into the tomatoes, then add crushed tomatoes, tomato paste, oregano, and thyme. Simmer for 5 minutes. Stir in mussels and shrimp, then pour in the wine and lemon juice. Cover and increase heat to high. Cook until shrimp have turned pink and mussels have opened, discarding any that have not opened. Serve over pasta and garnish with lemon wedges.

Sea Food Recipes  :  Sesame Seared Tuna


Ingredients : 

 1/4 cup soy sauce
 1 tablespoon mirin (Japanese sweet wine)
 1 tablespoon honey
 2 tablespoons sesame oil
 1 tablespoon rice wine vinegar
 4 (6 ounce) tuna steaks
 1/2 cup sesame seeds
 wasabi paste
 1 tablespoon olive oil


Cooking Method : 

1. In a small bowl, stir together the soy sauce, mirin, honey and sesame oil. Divide into two equal parts. Stir the rice vinegar into one part and set aside as a dipping sauce.

2. Spread the sesame seeds out on a plate. Coat the tuna steaks with the remaining soy sauce mixture, then press into the sesame seeds to coat.

3. Heat olive oil in a cast iron skillet over high heat until very hot. Place steaks in the pan, and sear for about 30 seconds on each side. Serve with the dipping sauce and wasabi paste.
